How our Acai is processed
Our Acai comes from Pará in northern Brazil. People who make their living from harvesting Acai berries are known as ribeirinhos or “people who live on the river’s riverines”. These ribeirinhos form co-operatives to harvest the Acai fruit daily, which is taken to marketplaces before it is transported down river for processing.
The fresh berries are cleaned and washed before they extract the pulp, pasteurise it, and then are immediately frozen. Our Acai is freeze-dried within 24 hours of being harvested, most importantly, to preserve the maximum amount of antioxidants, as these unstable compounds can degrade quickly, which are responsible for most of Acai’s health benefits.
The quality of our freeze dried acai powder is apparent from the colour; a vibrant deep purple produced by the anthocyanins cyanidin 3-glucoside and cyanidin 3-rutinoside. Freeze drying involves exposing the acai pulp to temperatures of – 40°C whilst in a vacuum environment, which eliminates all water through a process called sublimation. Over processing of acai through other methods of preservation such as spray drying (heating to temperatures over 80°C to remove moisture) and standard freezing can result in a brown powder with vastly decreased levels of antioxidants.
Antioxidant levels
Antioxidant levels in fresh acai are 70 TE/100g (trolox equivalent, the measurement of a substance’s antioxidant capacity compared to Trolox, an antioxidant derivative of vitamin E) which is the highest of any fruit, twice the antioxidant level of blueberries and ten times that of grapes. By freeze drying the pulp, up to 80% of the vitamins and minerals present in the fresh pulp can be preserved and safely stored at room temperature for up to 18 months.
